Spinach and Two Cheeses Ravioli Lasagna Recipe





This dish looks like a lasagna, because the ravioli are cooked in the oven, and arranged in layers. A delicious, different yet simple lasagna meal that will surprise your guests as it is similar to a lasagna, but it isn't using the traditional lasagna noodles. Ingredients:

* 1/2 lb. ravioli stuffed with ricotta and spinach (or any other stuffing of your choice)
* 2 tablespoons olive oil for recipe + a few drops to grease up the pan
* 1 clove of garlic
* fresh sprig of thyme, finely chopped
* 2 cups chopped fresh tomatoes (or pulp tomato)
* 1 large carrot, completely grated down
* 1 cup 15% cream
* 1 tablespoon fresh chopped basil,
* 1/2 lb. mozzarella cheese, grated
* 1/2 cup grated Parmesan

Instructions

I-Cook the ravioli
Cook the ravioli al dente in enough of boiling salted water. Drain the pasta and lay flat on a slightly oiled plate (or plates). Reserve.

II-Making the tomato sauce
Pour the olive oil in a small saucepan. Fry the crushed garlic and thyme for 1 minute, stirring constantly. Pour the chopped tomatoes over. Add salt and pepper. Bring to a boil then reduce heat. Simmer for 3 minutes, stirring occasionally. Remove saucepan from heat.

III-Making the lasagna
Preheat oven to 350 ºF. Grease up a lasagna baking dish with a bit of olive oil;

Cover bottom of dish with a little bit of tomato sauce and sprinkle with some of the grated carrot. Put a layer of ravioli over the sauce and pour a little bit of cream that you will spread evenly with the back of a spoon. Season with salt, pepper and chopped basil. Repeat the layers until all the ingredients are used, ending with cream on top.

Sprinkle shredded mozzarella over the top and sprinkle again with Parmesan cheese.

IV-Bake the lasagna
Cover with aluminum foil and bake in the oven for 20 minutes at 350 º F. Remove the foil and brown the top by baking an additional 10 minutes, or whatever necessary.

Remove from oven and serve immediately, accompanied by a nice green salad.
