Ingredients:

- Enough lasagna noodles for 3 layers
- 2 cans of sardines to your choice
- 4 red tomatoes
- 1 onion
- grilled eggplant slices frozen or homemade
- 6 ounces cream cheese
- 1 can tomato sauce
- 1/2 cup grated cheese of your choice
- olive oil
- 1 bunch fresh basil
- Salt and pepper
- a bit of sugar


Recipe for 4 portions

Instructions

1) Boil the lasagna noodles, in boiling water just enough to soften them; drain on a clean cloth.

2) Peel the tomatoes, chop them into cubes.

3) Make the onion cook in a skillet with a little olive oil; add the chopped tomatoes and some chopped basil leaves, a little sugar, bring to a boil then reduce heat and simmer over low heat.

4) Mix 1 box of sardines (content not the box) with cream cheese and remaining basil.

5) Prepare the eggplant.

6) Mix the mashed sardines in tomato sauce.

7) Place a lasagna noodle at the bottom of the lasagna dish, spread some mixture over the noodle then top with slices of eggplant and sardines from the 2nd box, cut in halves.

8) Cover with second layer of lasagna noodles, and repeat layers until all ingredients are used. Finish by covering 9 of tomato sauce mixed with grated cheese, put in the oven about 30 minutes at 180 ° C (gas 6), or shorter.
