A Non-Dairy Bolognese Lasagna




Finally a non-dairy bolognese lasagna, this one respects both vegetarian and vegan principles. To help making this recipe completely gluten-free if necessary, you can use gluten-free lasagna noodles, just make sure all the other ingredients suit your diet.




Ingredients for the vegetarian bolognese lasagna:

* 2 onions, chopped
* Salt and pepper and broth
* 1 pack dry lasagna noodles
* Bay leaf, parsley, basil
* Olive oil
* Meat substitute, such as Bulgur Wheat
* 1 can of peas
* 4 carrots, diced
* 2 tablespoons tomato paste
* 2 cans chopped tomatoes
* 2 cloves garlic, crushed
* 1 teaspoon Dijon mustard
* 1 cup flour
* 7 tablespoons vegetarian margarine
* Pinch of nutmeg
* 4 cups unsweetened soy milk

Instructions

1) Making the vegetarian Bolognese sauce: For the Bolognese sauce, heat a drizzle of olive oil in a skillet. Add the onions, crushed garlic, oregano and tomato paste. Then, once the onions have started to brown, add vegetarian meat substitute that you will mix. Then add the carrots ... and canned tomatoes and peas. Put in a stock cube and bay leaf, basil and other herbs and simmer for 25-30 minutes. Add water if mixture is too compact.

2) The non-dairy béchamel: Mix a pinch of salt and a pinch of nutmeg to the flour, then melt the margarine in a saucepan. When everything is liquid, pour the flour mixture over, and the Dijon. Whisk vigorously, it'll be a big ball of dough. Pour the soy milk gradually, while stirring constantly. Bring the sauce to a boil, then simmer a few minutes so that it thickens. Test seasoning and adjust if necessary.

3) Putting the lasagna together: grease up your lasagna dish, then put a little white sauce, a layer of lasagna, a layer of bolognese, a layer of bechamel sauce, a layer of lasagne, a layer of bolognese, a layer of bechamel sauce, lasagna ... etc.. Finish with a layer of bechamel sauce on top, so that the dish is not too dry and browns a little (you cannot get that perfect "au gratin" top without cheese...)! Then, set your lasagna to bake at 300 °F for about 45 min.
