Recipe for the three cheese lasagna rolls


Lasagna rolls are a delicious and innovative way to use lasagna noodles that will always make a good impression. While one cannot call this a real lasagna per se, they will not fail to impress your guests and still retain the taste of the italian lasagna, with a creative new shape... Serve two to each guest as main course but they make excellent appetizers also; serve one per guest.

Ingredients:

1/2 1 lb. pack of lasagna pasta (about 10 noodles)
2 cups grated mozzarella cheese
2 cups ricotta cheese
1/2 cup grated Parmesan
2 eggs lightly beaten
1/2 lb. frozen spinach, thawed and well drained
1/2 tsp. each: salt, pepper and nutmeg
2 cups of your favorite tomato sauce

ingredients for the White Sauce:

2 tablespoons butter
3 tablespoons white flour
2 cups milk
ground nutmeg, salt and white pepper


Method:

Thaw and drain completely the spinach by leaving it in the colander for 15-20 minutes

Cook the lasagna noodles in boiling salted water according to package directions. Mix the three cheeses. Add eggs, spinach, salt, pepper and nutmeg.

In an oven going 13 x 9 inch baking dish spread a thin layer of tomato sauce. One by one lay the lasagna noodles flat and spread evenly some cheese sauce mixture evenly over them. Roll the lasagna noodles up into rolls, leaving the seam at the bottom, in the sauce.

Repeat with remaining noodles and cheese mixture. Cover with remaining sauce. Bake covered at 350 ° F for 25 minutes. Remove lid and cook for another 5 minutes.

Melt the butter in a saucepan, without it browning. Stir in flour. Cook for 1 minute. Gradually add the milk. Cook and stir until the sauce almost starts to boil and thickens.

Season to taste with nutmeg, salt and pepper. Place each individual roll on each plate, seam oriented downwards and pour some white sauce over...

Makes 5 servings or 2 rolls per guest
