Shrimp and spinach lasagna recipe

A lasagna is an excellent way to make your kids eat their spinach... indeed there is something absolutely divine about the association between cheese, spinach and lasagna noodles! Here we add shrimp to this magic formula, for a simple appetizer type lasagna recipe...


* 12 Lasagna Noodles
* 1 lb. shrimp, peeled
* 1/2 lb. of frozen creamed spinach
* 2 cups of crème fraîche
* mozzarella, parmesan and swiss cheese
* Salt and pepper
* Fresh dill
* Butter to grease the dish
* Small but deep Lasagna Pan


1) Thaw the spinach in a strainer for at least 40 minutes. Cook the lasagna noodles in boiling salted water during 3 minutes.

2) Butter up the lasagna dish. Lay 3 lasagna noodles down at the bottom of the dish first, cover with half the thawed spinach and place half of the shrimp over spinach. Repeat once more this operation: lasagna noodles, spinach and shrimp.

3) In a bowl, mix the crème fraîche with the chopped dill, salt, pepper and grated mozzarella. Arrange 3 more lasagna noodles, cover with crème fraîche mixture.

4) Preheat the oven to 300 ˚F. Cover again with the last 3 lasagne sheets and sprinkle generously with grated parmesan and swiss cheese; we want a nice grated cheese top! Bake in the oven for 30 minutes, at 300 °F, or until the top has acquired its desired color.

5) Once cooked give this lasagna a good 10 minutes to rest before cutting it.
