Recipe for Zucchini and Ham Lasagna Rolls

What to do with zucchini? Let's look at an original pasta recipe with lasagna. What about using some leftover ham, or even bacon? Sometimes popular restaurant chains produce ideas that people are free to adapt and develop, or simply drop and keep looking... This recipe for lasagna rolls was inspired to me this way and it was a great discovery for me! What, rolled lasagna? You could almost see these as canneloni; yes, but calling them lasagna rolls is so much more fun. After some research on the internet on how to make lasagna rolls, I realized that in reality it was a very popular Italian recipe, so I tried this recipe, one that allowed me to make this dish with simple ingredients from my fridge; and like most people I always have a pack of lasagna noodles in the cupboard, all that was left for me to do is to make this!








Ingredients:

* 15 lasagna noodles
* 1 and 1/2 cups milk
* 2/3 cup water
* 2 tablespoons corn starch
* Salt and pepper
* 2 thick slices of ham
* 1 zucchini
* 1/2 cup grated parmesan

Instructions

Making the béchamel with zucchini and ham sauce:

1) 1 hour in advance, prepare the bechamel sauce; in a saucepan, combine milk, water, cornstarch, sifted, salt and pepper. To thicken over low heat, stirring constantly. The sauce should be thick. Cool, this will allow the sauce to freeze.

2) Finely chop the zucchini washed (and peeled if necessary) and ham. Add zucchini and chopped ham in béchamel sauce. Mix well.

3) Once the sauce is cold, add the grated cheese.

Boil the lasagna noodles

4) Bring enough water to a boil, in a large pot. Put the lasagna noodles in the boiling water for 5 minutes (about half the boiling time recommended on the package). Do not put them in all at once, but proceed in 'batches' to avoid them sticking together. In my medium sized pot, I did it three times. Stir with a whisk to prevent them from sticking. After 5 minutes of cooking, the noodles have softened; remove them with a slotted spoon, place them in a strainer and rinse under cold water.

5) Take each lasagna noodle individually, place on a plate and cut in halves lengthwise. Roll each strip to form empty rolls. Place each roll over a greased baking dish. Repeat the operation until all rolls are made.

6) Preheat the oven to 350 °F; Fill each roll with the preparation for the bechamel sauce, zucchini and ham. Once all the rolls filled, pour the remaining sauce in the dish and bake 15 minutes in the oven.
