Lasagna with carrots and goat cheese

This vegetarian lasagna recipe is for a starter dish or side dish to add to some kind of protein for a complete meal; you can serve with chicken, ham or fish. I have been posting many lasagna recipes with goat cheese lately as I had the chance to try the unique taste this type of cheese gives to a lasagna...








Ingredients:

* 1 and 1/2 lb. carrots
* 1 and 1/2 half-half or 15% cream
* 1 knob of butter
* 1 teaspoon olive oil
* 1 lb. goat cheese log(s)
* 12 lasagna noodles, half boiled
* 1/4 lb. grated swiss or cheddar cheese
* Salt and pepper
* 1 teaspoon chopped parsley

Instructions

Preparing the carrots and goat cheese:

1) Preheat oven to 350 ˚F (gas mark 6). Wash, dry, peel then grate the carrots preferable using a food processor. Place in a bowl and mix with parsley, a pinch of pepper and a little salt (or none for a healthier meal). Cut the goat cheese into thin slices.

Putting the lasagna together

2) Grease up a baking dish with oil on all sides. At the bottom, place four lasagna noodles, then some carrots, slices of goat cheese, drizzle with cream; place four more lasagna noodles over the cream. Repeat once more this step: lasagna noodles, carrots, goat cheese, cream, then cover with another layer of lasagna noodles; sprinkle with grated cheese; split the knob of butter and place on top layer as well. Sprinkle the top with a little cream, sprinkle the top with a pinch of parsley.

Baking the lasagna

3) Bake the lasagna in the preheated oven for 30 to 35 minutes.

4) Let your lasagna rest for a moment, leaving it in the oven with heat turned off, before cutting and serving.

Serve this vegetarian goat cheese and spinach lasagna warm, with a green salad on the side...
